Taro Baked "Chips"

Taro Baked Chips

Level: Easy
Serves: 2-3

1 lg Taro, peeled and sliced
1/2 tsp salt substitute
1Tbsp Spanish olive oil

Pre-heat oven to 400 degrees. Wash, peel and slice Taro root into 1/4 inch thick slices. Brush olive oil on each side of Taro slices. Place each chip (separately arranged) on a non-stick 1-2 inch deep cookie sheet.  Lightly sprinkle salt on Taro chips. Bake for 10 minutes on each side or until golden crisp.

I had these when I was on my honeymoon in Maui and LOVED them. I need to try to make taro chips someday...

You can bake them as thin or thick as you would like. I like them to have a little bit of "meat". Your honeymoon in Maui sounds fabulous. They grow the best fruits and vegetables on the islands!
